Rebuilding a historical creamery into a deluxe farmstay bed 'n' breakfast has been a labour of love for David and Gill Morgan.

"It's been a journey," David says with a wry smile as he shows me through the timber-panelled laundry with a gorgeous bench made from a slab salvaged from the nearby forest.
In fact, pretty much everything in this build is either original and repurposed material from the original creamery, or purchased from second-hand auctions and op shops.
"The Dairy" at Windalone is ready to start taking guests via AirBnB, and while the accommodation is undoubtedly attractive, it's the history of this place that is the real selling point.
The property at Wandella - 15 minutes' drive west of Cobargo - was originally purchased in 1870 by the Longsdales from County Kerry. They used it mainly for wattle tanning, while also constructing a cream dairy on site.
Later, the property was purchased by the O'Meara family for a reported 1000 pounds or so - a fortune even by today's standards.
David and Gill bought Windalone in 1986 and left their professional Canberra careers to move down on New Year's Day 1990 - well before the "tree change" was in fashion.
They wanted to raise children on a farm, and now grandchildren enjoy visiting the glorious restored farmhouse and gardens.
David began a project to re-roof a rundown creamery dairy shed out back, but a wild wind undid all his work and the remnants were left for a period, as demoralisation and life got in the way.
But then came the grand vision.
In 2017 David, along with family and a close friend or two, began planning a full reconstruction of the original dairy to liveable standards, but with sympathy to its origins.

"You know the story, the second little pig built his home from sticks, but this little piggy wasn't going to let a nasty wind blow his house down again," David says.
All remaining materials from the creamery was recovered and stacked on pallets awaiting the rebuild.
"I pulled it all down, piece by piece. Whatever was salvageable I salvaged.
"I knew one day it would be useful - when you live on a farm you know you never throw anything away. People just don't understand - maybe it's a farmer thing? A boy thing? Or that I'm just from that era where nothing goes to waste."

Everywhere you look you see remnants of the dairy now lovingly hand-built into luxury accommodation.
Recovered timber lines the walls of the entrance portico and bathroom. Thick wooden beams salvaged from the dairy frame the doorways and form exposed beams in the kitchen. The external panelling is entirely recycled timber and corrugated iron - which still bears the original dairy trademark.
Even the low concrete wash-down barriers are incorporated into the walls - the floor plan remains much the same, "if a little exaggerated from the original".
Cows were yarded in what is now the open-plan dining/lounge room, milked in the conversation nook, and the bedroom was the cream storage. Original stone-laid yards are even now in the process of being uncovered and restored.
"I really didn't know what we were getting in for," Gill says over a mug of coffee and fresh apple cake.
"I have to hand it to David. To see what it was, what was envisaged and now the result - it's an incredible achievement."
"The Dairy" is on the Morgans' working property in the shadow of Peak Alone with numerous walking tracks at your doorstep. It's within 30 minutes of the beaches of Bermagui or the historical village of Tilba with its boutique shops. For those with an adventurous bent, Brogo Dam and Wallaga Lake are also short jaunts with your canoe or kayak.
Or you could just leave behind the outside world and put your feet up in the luxury of The Dairy for a weekend to soak in the peace and tranquility of the rural countryside.
