Mason Harrison and Aaron Brierley featured in the squad that beat Griffith Three Ways 40-12 in Monday's grand final.
The Black Cockatoos led 26-0 after just 20 minutes, and were never threatened the rest of the way.
Harrison said the win was the best rugby league moment in his life.
"Ben Wellington's brother James passed away on the weekend of last year's knockout, so he put a memorial side together," Harrison said. "I put my hand up to play in that team.
"James' dream was for the South Coast to win a knockout, and that dream came true for his family.
"There were a lot of emotions after the match. It was healing for the Wellington family, and to do that for them, and the whole South Coast, was an emotional moment."
Harrison said the side started training in Nowra earlier this year, and didn't expect to win the competition.
"I'd played footy either with or against most of the boys in that side," he said. "We knew we'd do pretty well, but we didn't expect to win.
"Everyone started to gel after the first couple of games, and we put it all together.
"My dad and grandfather both played in knockouts, and I've got a lot of people in my family that have put in teams over the years.
"To win one for not only my family, but all the other families on the Far South Coast, was massive."
Harrison said the goal was to go back-to-back in next year's knockout, which is expected to be held in Nowra.
"It's certainly not an easy thing to win," he said. "Other teams came with stacked sides full of current or future NRL players, and we just went there with a dream to win for the passing of one of our brothers.
"This team was hand picked, so there were a lot of good players from the South Coast that missed out on being in the side.
"I'm confident we can put together a strong team next year as well."
