It's the second time in as many years the schools have combined in the kitchen, and this year money raised will go to the Fiona Lodge Ronald McDonald Beach House.
Hospitality students from both schools spend weeks preparing for the dinner, which turns the kitchen and dining rooms at Carroll College into a top-notch restaurant.
The students handle every aspect of the night - cooking, service, presentation, preparation, and clean up - and all students spend the lead up to the big night under intense tutelage of industry experts.
This year four local experts will help out; Brendan McClelland, from On the Pier, Amber Andrews, from Monet's Cafe Restaurant, Victoria Urbanik, of South Bank 2536, and Andrew Johns, of Bay Waters Inn.
The dinner will have a Mediterranean theme, Carroll College teacher Cathy Harris said.
"After the success of last year, we decided to do another one," Ms Harris said.
"They get competencies assessed, it's like work placement," Bay High teacher Cheryl Jack added.
Some of the Year 11 students met last Friday for the first time at Fiona Lodge. They were a bit shy with each other, but Carroll College teacher Jane Garland doesn't expect that to last.
Already, she said both schools were designing menus for the night, which will soon go before Moruya TAFE tutors to be fused and appraised.
The dinner will be held on Tuesday, June 26, at Carroll College from 6.30pm. Tickets are $50 per head.
